Ingredients

Instructions
  1. Wash and chop spring onion white and green separate and keep aside. Wash, peel and grate carrot and keep aside. Wash and chop capsicum lengthwise and keep aside. Slit green chili diagonally and keep aside. Chop ginger lengthwise and keep aside. Boil noodles in a salty water and some oil, drain when done. Keep aside.
  2. Heat 2 tbsp. oil in a pan or wok. Add spring onion white, green chili and ginger. Fry till pink in color.
  3. Now add grated carrot and fry.
  4. Add capsicum and fry.
  5. Add spring onion green and fry.
  6. Now add soya sauce, vinegar, salt and crushed black pepper. Mix well and fry for few seconds..
  7. Now add boiled noodles and mix lighly. Cover tha pan and switch off the flame. Leave for 10 minutes.
  8. Now the filling is ready, transfer in a bowl and let it cool down completely.
  9. Now preheat the over at 180°C and start making spring rolls, for that take 1 pastry sheet and place 1-2 tbsp. of filling in one corner side like shown in picture.
  10. Brush that corner with water and fold just to cover the filling like shown in picture.
  11. Now brush both side corners with water and fold like an envelope. (As shown in picture.)
  12. Now brush water all over and start the filling side rolling towards the last corner. (As shown in picture.) Keep aside covered with a damped cloth.
  13. Follow the same procedure and make all other spring rolls and keep under damped cloth.
  14. Now check the oven must have been preheated by then.
  15. Place all spring rolls on a greased baking tray and brush all of them with oil.
  16. Bake in a preheated oven for 15 minutes at 180°C. After 15 minutes turn all and bake again for another 10-15 minutes at 180°C.
  17. When done remove and serve hot with chili sauce.
  18. You may also deep fry on medium heat till golden brown in color. Remove on absorbent paper, cut diagonally in center and serve hot with chili sauce.
Recipe Notes
  • You may also use cabbage if spring onion is not available.
  • You may omit noodles if you want to use only vegetables.
  • You may adjust the soya sauce quantity as per your taste.
  • Adjust chili if serving to kids.
  • To roll down spring rolls first apply water and then fold otherwise it may not stick well.
  • You may also fry on medium heat till golden brown in color.
