For Dough
  1. Take warm water, sugar and instant dry yeast in a bowl. Mix lightly, cover and keep aside for 8-10 minutes.
  2. Meanwhile sift maida 2-3 times in a wide big bowl. Add salt and butter mix it well.
  3. Now check yeast if it starts bubbling, pour this in to the maida, knead well to form a soft dough.
  4. Brush the dough with oil and place in a lightly greased container for 30 minutes in a warm place. Dough should be doubled in size by then. Take it out punch it back and knead for few seconds out until smooth.
  5. Divide the dough in to 10 equal balls. Cover with a damped cloth.
For Croissant
  1. Now for croissant, grease a baking tray and keep aside. Take a ball of dough, roll it lengthwise and cut in to triangle shape.
  2. Now spread aprox 0.5 tbsp of butter and then sprinkle mixed herbs all over.
  3. Now start it rolling from the wider sides towards the narrow side.
  4. Hold the both side and curve it slightly.
  5. Place on a greased tray, covered with a cling film.
  6. Do the same to make all croissants, and keep placing on a greased tray. When done, (Making sure all croissants are covered completely, othrewise they may dry) Place in a warm place for 10-15 minutes.
  7. Meanwhile preheat the oven at 180°C. And then bake all croissants in a preheated oven for 15 minutes or until golden brown in color.
  8. Serve warm with cream cheese or cheese spread. Enjoy with tea or coffee!
Recipe Notes
  • First of all check, if yeast is not bubbled, discard it. That means yeast is not good or it might be very old to use.
  • For better results sift the maida for 2-3 times.
  • Knead the dough until it smooths.
  • You may also add flavors to your croissants (mix the spices/ herbs with maida).
  • You may use any herb or seeds to top your croissant.
  • Baking is always a hit and trial method as the baking time and temperature may vary on different weather conditions, the type of oven, the quality of maida and yeast. So don’t worry if you do no get it right in first attempt. Keep trying and surely you will be successful next time :).
