Instructions
  1. Preheated the oven at 170°C and line or grease all muffin pans. Keep aside.
  2. Now take gehu aata, makki aata, suji, oats, baking powder, baking soda, mixed herbs, salt and red chili flakes in a wide bowl. Mix well and keep aside.
  3. Boil 1-2 cup water in a pan, place a strainer over it and cover the pan.
  4. Meanwhile separate small sized broccoli florets from stems and keep aside. Peel the stems and chop them finely, keep aside.
  5. Now check if water has started boiling, keep a strainer over the pan and place broccoli, carrot and sweet corn one by one inside the strainer and cover to blanch for a minute or two. When done keep all blanched vegetables aside to cool.
  6. Now in another bowl beat well curd and water, add this to dry ingredients. Mix well.
  7. Now add oil and mix nicely.
  8. Now add all blanched vegetables along with chopper green chili and fold lightly.
  9. Divide this in all lined muffin molds.
  10. Finely chop fresh red or green chili and mix with red chili flakes. Sprinkle few over all muffins and bake in a preheated oven at 170°C for 15 minutes or until a knife inserted comes out clean.
  11. When done, take them out of the oven let it cool down to handle and arrange over grill and drizzle bit olive oil on each muffin.
  12. Serve warm!
Recipe Notes
  • You may use any vegetable of your choice or easily available to you.
  • Spring onion also tastes good in this recipe.
  • Beat curd well with water before adding to dry ingredients.
  • You may also make a bread loaf of that, just increase the baking time.
  • This is perfect for any party.
  • Adjust the spices as per your taste and tolerance.
  • If serving to kids, adjust chili as per their tolerance.
