Instructions
  1. Heat 2 tsp oil in a non stick pan, saute chopped spinach until done for 3-4 minutes at high to medium flame. Remove and keep aside.
  2. Now in same pan, heat another 1 tsp oil and saute chopped mushroom for 4-5 minutes or until all water evaporates at high to medium flame. Remove and keep aside.
  3. Now heat 2 tbsp butter in the same pan and fry 2 tbsp maida until pink in color. Now add 1.5 cup milk and stir it continuously until it starts boiling.
  4. When it starts boiling, add spinach and mushroom and mix well. Let it cook for another 2-3 minutes.
  5. Now add cheese slice and cover the pan, cook for another 3-4 minutes at low flame.
  6. Now switch off the flame and add all spices, mix well. Keep aside to cool down. (You may also refrigerate it for later use.)
  7. Now when you wish to serve, take pizza base, spread well pizza/ pasta sauce. (Its optional, you may no need to do this step if you do not want this.)
  8. Now divide spinach sauce over both pizza base and spread nicely.
  9. Top with baby corn, olives and Jalapeno, sprinkle some salt and dash of olive oil.
  10. Bake in a preheated oven at 180°C for 20-25 minutes.
  11. Slice and serve. Enjoy!
Recipe Notes
  • Keep it stirring, while making sauce otherwise it may burn or lumpy too.
  • You may use any other vegetables of your choice or easily available to you.
  • This is perfect for any party as you can precook the spinach sauce and refrigerate it until use for a day or 2.
  • Adjust the spices as per your taste and tolerance.
  • If serving to kids, adjust chili as per their tolerance.
  • You may also use homemade pizza tomato sauce.
  • You may also use fresh dough base and top with this sauce and bake it fresh. 
  • If you want to make it more cheesy, spread a layer of grated mozzarella cheese and then bake it.
