First of all lets prepare Marzipan. For that peel the soaked almonds and keep aside. Now in a food processor take peeled almond, vanilla essence and icing sugar, chop to smooth paste. Now remove and add sufficient milk or sugar syrup to knead medium soft dough. Cover and Keep aside.
Slice the fruit cake in to 0.5 to 1 inch thick slices. Now with the help of a cookie cutter (Any shape of your choice) cut the cake slices. Keep aside.
Now on a board or marble dust some icing sugar and roll the marzipan in to a thick layer. Cut that with the help of same cookie cutter. Keep aside.
Now take 1 piece of cake, place 1 piece of marzipan and then another piece of cake and finally a piece of marzipan. Do the sale with all cake pieces. Keep aside.
Decorate with any piece of fruit (Or Dried Fruit) and serve.
You may also use ready made eggless (suitable for Vegetarian) marzipan.
You may use any kind of sponge cake of your choice.
You may also use any leftover spong cake.
You may also use chocolate flavor cake for that you can also mix 1-2 tbsp choco powder to marzipan.
