Instructions
Cutlet
  1. Wash and clean lobia and soak overnight.
  2. Pressure Cook lobia for 1 whistle on high and then 3-4 whistle on low flame. Drain and refrigerate for 1-2 hours. In a big bowl add boiled lobia and crush them roughly.
  3. Add chopped vegetables and all spices, mix well. And mix sufficient bread crumbs for the binding purpose.
  4. Divide the mix in to 12 medium size balls and shape each ball according to the shape of your bread.
  5. Now in another bowl take corn flour, pinch of salt and crushed black pepper and mix well with sufficient water to make a thin dip. (Make sure no lumps should form)
  6. Now dip each cutlet in corn flour dip and roll in bread crumbs. Do the same with all cutlets and arrange in a plate. Once all cutlets are ready refrigerate them for atleast 1-2 hour.
  7. Now when you want to make a sandwich take cutlets out of the fridge and directly fry in hot oil and remove on absorbent paper. Keep aside.
Dressing/ Sauce
  1. Beat the thick curd well until smooth and creamy Then mix all ingredients to it and keep aside.
How to assemble Burger
  1. Cut the bread in to half and toast (cook) on both sides over a medium heated tawa.
  2. Now spread dressing (sauce) on both pieces of bread. Put fried cutlet on one side and sliced cucumber on another piece. Sprinkle dash of salt and pepper. You may also use other sliced vegetables (onion, capsicum,tomato) along with cocumber.
  3. Place over each other.
  4. Arrange all other burgers same way.
  5. Serve immediately with ketchup or dressing sauce.
Recipe Notes

For Cutlets

  • If you want quick cutlets you may use baked beans / lobia available in tins in market. Just drain them and refrigerate for some time before use.
  • Make the cutlets of same shape according to bread you are using.
  • Deep fridge the cutlets and and fry directly in hot oil.
  • Do not fry for more than a minute as everything inside is already cooked.

For Dressing (Sauce)

  • To enhance the flavor you can use flavored cheese spread or mayonnaise.
  • Check if cheese spread or mayonnaise is suitable for vegetarians or not.

For Burger

  • Use your choice of bread. You can also try flavored bread here.
  • You may use any shape of buns, long or round buns as per the availability.
  • You may also use sliced onion, tomato, capsicum or lettuce leaves with cucumber.
