Scrub and wash potato properly for no dirt. Wipe with a kitchen towel.
Now pierce the potato using a fork.
Bake the potato for 50 to 60 minutes or until cooked. (Check with a knife, it should be inserted into the center easily.)
When done take it out of the oven and switch it off. let it just cool down to handle. (If you do not want to serve right now, wrap it in a aluminium foil and keep inside the warm oven. Take it out when you want to serve).
Meanwhile mix all the chopped vegetables, butter, salt and black pepper in a wide bowl. Keep aside.
Now when potato is cool enough to handle, make a deep cut lengthwise in the center. Scrub the skin from the center.
Now using a fork scrub the potato flash and take it out over vegetables. Mix well.
Now fill the potato jacket with this vegetable potato stuffing.
Top with ketchup and serve hot.
You may use your choice of vegetables for topping.
You may also use chili sauce/ green chili sauce or mustard sauce as well to serve with.
Adjust the butter as per your taste. the more butter you use, more yummy it is.
You may also use cheese as a topping to make it cheesy spud.
